Yule Get Baked - Boffo Biscuits

One of the most magical things about Christmas time is getting a delivery of fresh baked goods from a loved one.

Last week, we received a delivery of freshly baked biscuits from Lynne Russo, mother of Brian Russo, the head of ‘Christmas and Monsters’.

Brian recently sat down with his Mom, remotely, to ask her a few questions about these boffo biscuits, which brought us all some Christmas magic in the middle of January:

Brian: So, thank you so much for that biscuit, that was great!

Lynne: I’m glad. Yeah. Did Quill (Brian’s son) have a taste?

Brian: He, uh… yeah… actually, yeah, I think he did.

Lynne: Okay.

Brian: I think the first night that we got them Emily microwaved one and then fed some to Quill.

Lynne: Oh, okay. I don’t think they’re as good microwaved as toaster.

Brian: What I did was, I made turkey bacon in the oven, and then put one in with it towards the end. It was so good.

Lynne: Yeah, it really needs that real heat to come alive. And lots of butter!

Brian: Although, there’s lots of butter already in it. Right?

Lynne: Oh my gosh, yes! A pound of butter….. I think I made about sixteen.

Brian: Wow. A whole pound of butter… So, where did you get the recipe?

Lynne: The recipe is from the Buttermilk Kitchen, in Atlanta. Once Daddy showed it to me, we both wanted to go every time… Or we’d go once a week, and then get a whole six pack of biscuits to take home.

Brian: So what is this place?

Lynne: It’s this little restaurant. So normally, any weekend morning, or sometimes seven when they’re open during the week, I think Tuesday to Sunday, you normally have to wait outside just to get in. They did a lot more take-out with the Pandemic. They even had some heated outdoor areas for the Pandemic. But… it’s just quality things. They started with really good ingredients, they hooked into local farms. In the cookbook they talk about where they get their buttermilk and where they get their butter. And they user high fat butter and buttermilk, which is European butter. Whole foods happens to carry to buttermilk…. Brian, it is so thick that you can eat it like sour cream!

Brian: Woah.

Lynne: In fact, we made it with pancakes and we had to water it down with skim milk because they were too… it was like dough almost. So… it’s good!

Brian: Nice! So, did you go there a lot when you were living in Atlanta?

Lynne: You know, when I would visit, yeah… and then when we sheltered there, we would go there all the time.

Brian: How long were you guys sheltered in Atlanta?

Lynne: We had to shelter there from the beginning of March to the beginning of May. So, two and a half months, I think.

Brian: And did you get take out from there a lot?

Lynne: Yes. yes. In the beginning they kept tables six feet apart so we would go there a little bit, but as things got scarier we just got it to go.

Brian: Yeah… (long pause)….Well, thank you so much, the biscuits were so good. Did you ship them to everybody?

Lynne: Yeah, I did. That’s why I could only give you three… I gave Melissa four, Molly and Alex got two, Meredith got three… and now we’re all done…. The next thing I want to make is Hot Chocolate Donuts. I want to try that.

Brian: What’s a Hot Chocolate Donut?

Lynne: I don’t know. I think it’s just a… creamy, milky donut… Georgia (Brian’s niece) that’s her new thing now. She’s been making doughnuts all the time. I’m waiting for her to ship me some! She’s a really good baker.

Brian: Yeah, I’ve heard!

Brian: Well, thanks so much! Is there anything else you want to say about these biscuits?

Lynne: You know… when I made them, I thought, if these close close to Buttermilk (Kitchen), I’ll be fine… because they have commercial ovens and everything… And then when we tasted them we were like OH MY GOD! They taste just like it! It’s so good!

Brian: So, you were pretty happy with how they came out?

Lynne: Yeah…. ‘Cause there’s different kind of biscuits… There’s roll biscuits, where you kind of handle them, but most biscuits are good if you don’t handle them. And these are dry biscuits with a half cup measure, so that’s why they look kinda lumpy ‘cause you just throw ‘em on the pan.

Brian: Did you use an ice cream scoop like they say in the recipe?

Lynne: No, actually. I used a half cup measure, because that was more the size that they are in the restaurant. Although they might have flattened out anyways, but the circumference of my half cup measure kind of looked like the way it was in the restaurant.

Brian: Well, thanks!

Lynne: Okay, you guys have a great day!
